 Green’s Pleasant Springs Orchard Apple Crisp

4 cups of sliced and cut up tart apples
2/3 to ¾ cup of brown sugar
½ cup of all-purpose flour
½ cup of oats
¾ teaspoon cinnamon
¾ teaspoon nutmeg
1/3 cup butter/margarine(softened)

Heat oven to 375 degrees and grease an 8x8x2 inch pan.
Place apple slices in pan.
Mix remaining ingredients thoroughly and sprinkle over apples.
Bake 30 minutes or until apples are tender and topping is golden brown.

Best when served warm!  Makes 6 servings.


Apple Bundt Cake

3 eggs
1 cup cooking oil
2 cups sugar
1/4 cup water
3 cups sifted flour
1 teaspoon salt and baking soda
2 teaspoons vanilla
3 cups pealed chopped Jonamac apples (2 pounds)
1 cup chopped walnuts

In a large bowl combine eggs, cooking oil, sugar and water. Beat well. Sift together flour, salt and soda. Add to creamed mixture. Add vanilla, apples and nuts. Bake in a greased and floured bundt pan at 350 degrees for 50-60 minutes. Cool in pan 10 minutes.

Topping
1 cup brown sugar
1/4 cup milk
1/2 cup butter

Cook topping in pan for 3 minutes over medium heat. Poke holes in the bottom of the cooled cake with a toothpick. Spoon one-half of the topping over the bottom of the cake. Invert on a plate. Let stand 5 minutes and remove the pan. Spoon the remaining topping over the cake. It can be served with sweetened whipped cream. Enjoy.



Vivian’s Apple Pie

10-inch deep-dish pie shell – bake 10 min.
3-3 ½ lbs. Apples, combine at least 2 varieties

Combine pared, cored and sliced apples with the following:
   1 cup dark brown sugar
   ¼ cup cornstarch
   1 teaspoon cinnamon
Mix well and spoon into pre-baked shell

Combine in a large bowl and mix well the following:
   1 cup dark brown sugar
    ½ cup rolled oats
    ½ cup flour
    ½ cup (1 stick) melted butter
Sprinkle and pat over apple mixture
Bake until golden brown and juices are bubbling, about 50 min. @ 350 degrees


Fresh Apple Cake


Blend together
1 cup white sugar
1/2 cup brown sugar
1/2 cup shortening
Then add and mix together
1 cup sour milk (1 tablespoon lemon juice in fresh milk let stand 5 minutes)
2 teaspoons baking soda
Stir in and mix well
2 eggs
2-1/4 cup flour
1/2 teaspoon nutmeg and cinnamon
1/4 teaspoon cloves and salt

Fold in
3 cups chopped apples
Pour in a greased and floured 9 x 13 pan. Sprinkle topping over batter. Bake at 350 degrees 35-40 min.

Topping
1/8 teaspoon cinnamon
1/4 cup brown and white sugar
1/2 cup walnuts or pecans chopped

Applesauce Recipes

Applesauce is easy to make. Take some washed apples. Peeling is optional. Leaving the peel on is better for you since it contains pectin which sweeps away artery-clogging cholesterol.

Chop the apples into medium small pieces. The smaller the pieces, the faster it cooks. Place pieces in a bowl twice the size of your chopped apples and microwave for 3 minutes. Stir once and microwave again about 3 minutes. Sprinkle with a little cinnamon sugar or a small amount of honey, stir and refrigerate or eat while slightly warm.

Applesauce can be enjoyed many ways. Enjoy it fresh from the jar as dessert or over pancakes. You can take a rolled pork roast, sprinkled lightly with salt and pepper and coat it with applesauce. The applesuce seals in the juices and gives it great flavor.

Applesuace Cake

1 cup raisins
3/4 cup water

Bring to a boil. Cover and simmer 3 minutes. Remove. Drain raisins. Add water to make 1/2 cup chopped raisins and set aside.

2 1/2 cup flour
2 cup sugar
1 1/2 t. baking soda
1/2 t. baking powder
3/4 t. cinnamon
1/2 t. each salt and cloves

Combine, then add:

1 egg
1 1/2 cup applesauce and reserved raisin liquid
1/2 cup chopped nuts( walnuts or pecans)

Beat on low until combined, then on medium for two minutes. Then add nuts and raisins. Turn into a greased and floured 9 x 13 pan. Bake at 350 degrees for 45-50 minutes. Can be served with whipped cream.

Oatmeal Applesauce Raisin Squares

2 cups quick or old fashioned oatmeal
1 3/4 cup flour
1 cup butter
1 cup firmly packed brown sugar
1 t. cinnamon
3/4 t. salt
1/2 t. baking soda
1/4 t. nutmeg
1/8 t. cl;oves

Combine all in a large bowl, beat on low until mix is crumbly. Reserve 2 cups of mixture. Press remaining in bottom of greased 9 x 13 pan.

Next combine:

1 1/2 cups applesauce
1 cup raisins or crasins

Spread the applesauce and raisin mixture over the base, spreading to the edges. Sprinkle with reserved crumbs. Bake at 400 degrees for 25-30 minutes or until golden brown.
Cool and cut into squares.

 Raspberry Recipes

Baked in Raspberry Shortcake


2 cup  flour
1 cup  sugar
4 teaspoon  baking powder
1 teaspoon  salt

Sift together.

1 cup milk
2 eggs
4 teaspoon  melted butter
3 cup ripe raspberries

Add milk, eggs and butter to above. Beat with a mixer on medium for 2 minutes. Pour into a 9X13 glass baking dish. Top with berries. Sprinkle with crumb topping. Bake at 350 degrees for 45 minutes.

Crumble  topping
1 cup flour
1 cup sugar
½  cup softened butter

Mix together until resembles crumbs. Sprinkle on above.

Raspberry Delight

1 cup graham cracker crumbs ( 5 double crackers crushed)
2 teaspoon melted butter
2 teaspoon sugar

Mix together in an 8 inch glass dish. Bake at 350 F. for 8 minutes. Cool

1 package ( 8 oz.) cream cheese
1-½  cup milk
1 package (3 ¾ ounces) lemon instant pudding and pie filling
2 cup raspberries

Beat softened cream cheese until smooth. Stir in milk gradually until well blended. Add pudding and pie filling;

mix then beat on medium speed until mixture mounds slightly, 1 to 2 minutes. Spread mixture on crusteaspoon Refrigerate  2 hours. Top with raspberries.


Raspberry Cordial


2 quarts raspberries
1 quart vodka

Put together in a large bowl and cover with plastic wrap. Drain after 1 month.

Sugar Syrup

¾ cup water
1 ½ cup sugar

Boil 5 minutes. Cool.

Mix sugar syrup with raspberry vodka above. Bottle and store on shelf. Serve over ice or ice cream.

 Squash & Apple Bake

2-4 lbs. of Butternut Squash
4 Baking apples

Pare the squash and cut in ½ inch slices. Place in a 9 x 13 inch glass baking dish.
Peel,cut, and core apples into ½ inch slices. Place over the squash.

½ cup brown sugar
¼ cup melted margarine
1 tablespoon flour
½ teaspoon salt
½ teaspoon mace
 
Mix the above ingredients and spread over the apples/squash.
Bake at 350 degrees for 1 hour.
